Easy dill sauce for cooked fish
Whip up a dill sauce for grilled, poached, roasted or pan fried fish - for when you think 'oh, this is going to be just a bit bland...'. It goes particularly well with salmon but other fish will be as happy in its company.
Mix a bowlful of crème fraiche (or thick Greek yoghurt, or sour cream) with lots of fresh chopped dill. Season with: a pinch of sugar, salt, pepper and mustard powder; add a squeeze of lemon and (optionally) a pressed clove of garlic. Chill. Serve. Wish you'd made twice as much.
